I love baking and trying out recipes with bananas. I feel like anything banana is always such a good choice for dessert. I wanted to combine my love of banana bread into a cookie form so thus these banana bread sandwich cookies were born.

I have really been bananas for bananas lately. I have been having fun making pumpkin banana bread, banana pudding brownies, and chocolate pudding banana bread.

This recipe is also great if you need to use some ripening bananas up. I’m always hopeful when I buy bananas. Sometimes, my kids each want a banana every day until they are all gone. Sometimes, they ask for banana smoothies, but then sometimes the bananas just sit there forgotten about until they become spotty.

These banana bread cookies kind of remind me of a whoopie pie but they are a little bit different since they don’t puff up too much.

How ripe do the bananas need to be?

The bananas can be any where from a little spotty to turning black. The darker the banana the sweeter they cookies will be but you can use anything in between just stay away from using bananas that are still green or have only just turned yellow.

To make these banana bread cookies, you will need:

  • Vegetable oil
  • White sugar
  • Egg
  • Baking soda
  • Baking powder
  • Cinnamon
  • Nutmeg
  • Salt
  • Flour
  • Vanilla extract
  • Bananas

For the filling you will need:

  • Vanilla extract
  • Marshmallow fluff
  • Powdered sugar
  • Butter

How do I store these cookies?

You’ll want to store these cookies in an airtight container inside of your refrigerator after preparing them due to the marshmallow filling.

How many cookies does this recipe make?

It seems like you are making so many cookies with this recipe but because you are making sandwich cookies it’s not as many as you think. This recipe yields about 12 cookies once they’re stacked together with filling.

  • Cookie sheets


  • 1/2 cup vegetable oil
  • 3 ripe bananas mashed with a fork
  • 1 cup white sugar
  • 1 egg beaten
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 2 cups all purpose flour
  • 1 tbsp vanilla extract

For the filling

  • 1 1/2 cups marshmallow fluff or cream
  • 1/4 cup powdered sugar
  • 1 tbsp vanilla extract
  • 1/2 stick butter slightly softened


  • Begin by preheating your oven to 350 degrees and spraying your cookie sheets with non-stick spray.
  • In a large mixing bowl combine flour, cinnamon, nutmeg, vanilla, sugar, and the mashed banana.
  • Add in the oil, egg, baking soda, and baking powder and then mix with a hand mixer for about three minutes.
  • Bake at 350 degrees for 8 to 10 minutes. Edges will be golden brown.

For the filling

  • Combine the marshmallow creme, vanilla extract, powdered sugar, and slightly softened butter (do not completely melt the butter) in a mixing bowl.
  • Mix well on a low setting and then beat on high for about three minutes until the mixture becomes fluffy. Use a tablespoon to spread the mixture on the bottom of half of the cooled cookies and then press them together.
  • Refrigerate for about 20 to 30 minutes before serving. Store any left over cookies in the refrigerator for up to three days
