This copycat Chicken Salad Chick Fruity Fran is a wonderful fruity chicken salad. Bring one of your restaurant favorites home with this easy copycat recipe!

It is no secret that I’m a huge fan of Chicken Salad Chick copycat recipes. Some of my other favorites from there are their pimento cheese, Sassy Scotty chicken salad, and Dixie Chick chicken salad. I am working on developing copycat recipes for all of their delicious chicken recipes. Next on my list was their Fruity Fran which is loaded with apple, pineapple, and grape pieces.

This copycat Chicken Salad Chick Fruity Fran is so easy to make. It goes great on a sandwich, salad, or with crackers. I love making this chicken salad in the summer months. It’s nice to prep a batch for lunch!

Ingredients needed

For this chicken salad, you will need:

  • Chicken tenderloins: I think for the closest taste to the restaurant version it is best to use chicken tenderloins. You can sub chicken breast or cooked and pulled rotisserie chicken but it will not be as close.
  • Water: To boil the chicken in.
  • Celery: You will need one rib of celery, finely diced. I ran mine through a food processor.
  • Grapes, pineapple, and Fuji apple: The fruit for the chicken salad.
  • Mayonnaise: I used Duke’s brand mayonnaise and I think it will give you the closest taste to the restaurant version.
  • Garlic powder, onion powder, salt, and pepper: To season the chicken salad with.

Equipment needed

You need a large mixing bowl, pot to boil the chicken in, and a hand mixer or food processor to run the chicken through.

Recipe instructions (step by step guide)

To make this chicken salad, begin by adding water to a large pot. Add the chicken tenderloins into the water and then bring the water to a boil.

Once the water is boiling, reduce the heat to low and cover the pot. Cook the tenderloins for 8 to 10 minutes. Do not overcook or the chicken can become rubbery. The chicken should register at 165 degrees with a meat thermometer or you will also able to tell it is done when you shred it.

Once the chicken is cooked, remove it from the water and let it cool. Use a mixer or food processor to shred the chicken. I find that using a hand mixer is best because it is quicker and it helps get the chicken very fine.

Next, use your food processor to dice your celery fine pieces.

Add the mayonnaise, celery, and seasonings to the shredded chicken. Add the diced fruit. Stir well and then serve.

Tips

  • You can use chicken breast or leftover rotisserie chicken but I think chicken tenderloins will give you the closest taste.
  • If possible, use Duke’s mayonnaise. A lot of restaurants use Duke’s and it will give it the closest taste to the restaurant version.

How to store leftovers

Store any leftover chicken salad in an airtight container in your fridge. This chicken salad will be good for four days after making.

Equipment

  • Large pot

Ingredients
  

  • 1 pound chicken tenderloins this will yield about 2 cups of shredded chicken if you are using rotisserie or chicken breast
  • 1 large celery rib finely diced
  • ¾ cup Duke's mayonnaise
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 1 pinch salt or to taste
  • 1 pinch black pepper or to taste
  • ¼ cup fresh pineapple diced
  • ¼ cup grapes halved
  • ¼ cup apples diced

Instructions

    This tastes just like it does in the restaurant! The only change I made was to add a small amount of the pineapple juice (maybe 1/2 tbsp). Delicious
