Crockpot spinach queso is the perfect dip for taco Tuesdays or your next big party! I love making this dip for Superbowl Sunday parties. I also feel a little less guilty about eating so much since it’s loaded with spinach!
1.5 cups of frozen chopped spinach
1/2 cup of diced white onion
1 bunch of fresh cilantro
16 ounce block of processed cheese such as Velveeta
8 ounce block of cream cheese (softened)
1/2 cup of shredded cheddar cheese
8 ounces of mild red salsa
1 teaspoon of paprika
1 teaspoon of chili powder
Begin by spraying your crock-pot with non-stick spray. Then wash your cilantro and finely chop it. Take your frozen spinach and wring out any excess water. Chop your processed cheese into large blocks so that it melts evenly. Combine all of your ingredients in your crock-pot and cook for 3 to 4 hours on low. Stir well and then serve over tortilla chips.
