These English muffin pizzas are great for when you don’t have a lot of time and are looking for an easy weeknight dinner. They also make for a great lunch and are super kid friendly!

I really love this recipe because it is so customizable. I listed the ingredients I used below but you can also use Canadian bacon, sausage, onions, tomatoes, banana peppers, or whatever else you like on your pizza or have in your pantry. It’s a really versatile recipe so you can use whatever your favorites are or whatever you have on hand. You can also use whole wheat, gluten free, sour dough, or regular English muffins if you need to further customize this recipe!

I have to admit that I started making these long before I had kids. When I had a busy day at work these would be my go-to with a small green salad on the side. They were just so easy after a long day! Now that I’m a mom, these are so fun to make with my two kids. It’s great because they can pick out what they want on their pizzas and I can tell they feel really proud of their little pizza creations. You can always have your kids help with the toppings and the cheese with this recipe.

To make these English muffin pizzas, you’ll need:

  • 4 English muffins (I used sourdough)
  • Tomato sauce
  • 1 cup of mozzarella cheese

Plus your choice of toppings such as:

  • Mini pepperonis
  • Black olives
  • Chopped bell pepper
  • Chopped red or white onion
  • Canadian bacon
  • Grape tomatoes

How to make this recipe

To make this recipe, begin by spraying a cooking sheet with non-stick spray and place your English muffin halves in the oven while it’s preheating to 400 degrees; this will keep your mini pizzas from getting soggy by toasting them a little. While the oven is preheating, chop the bell pepper and grab the rest of your ingredients.

Easy English Muffin Recipe

Once the oven is close to 400, carefully remove the English muffins (don’t burn yourself!). If you’re having kids help, you can either pre-toast and cool the sliced English muffins or skip the step. The toasting does help the muffins not to become soggy with sauce. Next, add one to two tablespoons of tomato sauce per muffin, a generous sprinkling of mozzarella cheese, and whatever ingredients you wish to add for your pizzas. Bake for about 8 minutes at 400 degrees or until the cheese is melted.
