Green Eggs & Turkey Breakfast Sandwiches
These green eggs & turkey breakfast sandwiches are a great item to incorporate into your weekly meal prep routine and a great way to get more spinach. They aren’t super time consuming to cook and you can make these ahead and freeze them.
Turkey sausage patties
1 bunch of spinach
1/4 cup of diced white onion
Pepper jack cheese slices
1 package of English muffins (6 pack)
Optional milk or half and half
Begin by preheating your oven to 350 degrees. Wash and dry the spinach then chop it thoroughly. Cook the spinach and onions in a skillet over medium heat with a generous drizzle of olive oil. While the spinach and onions are cooking, crack and whisk together five eggs in a bowl and add a few splashes of milk or cream if desired (this will create fluffier eggs). Pour the spinach, onion, and beaten eggs into a greased glass cooking dish. It should look something like this:
Cook the egg mixture for 25 to 30 minutes (or until the eggs are no longer runny) at 350 degrees.
Let the egg mixture cool and cook your turkey sausage according to the package’s instructions. Once the sausage is cooked and the eggs are cooled, cut the egg dish into six equal squares and assemble your green eggs and turkey breakfast sandwiches. Don’t forget to add the pepper jack slices. You can wrap these in aluminum foil and keep them in your freezer if desired or you can eat them right away.
