Honey Mustard Chicken
This recipe for baked honey mustard chicken is great for a busy weeknight. It’s quick and easy to put together and it tastes like you spent hours on it! I like to serve this with broccoli or baked sweet potatoes.
1/4 cup of honey
1/2 cup of mayonnaise
3 tablespoons of spicy or honey dijon mustard such as Grey Poupon
2 tablespoons of regular mustard
1/2 packaged of bacon bits
1/2 cup of shredded cheddar cheese
2 large chicken breasts
Begin by preheating your oven to 400 degrees and spraying an oven safe dish with cooking spray. Take your chicken breasts and gently pound them with a meat tenderizer but not so much so that they become flattened. Add garlic salt and pepper to the outside of the chicken and then partially slice open each breast length wise and add a generous amount of bacon bits. Combine the honey (microwave for 10 seconds to make it easier to mix), mayonnaise, spicy mustard, and regular mustard and mix well. Add a few spoonfuls of the mixture along with a generous amount of cheddar to the inside of each breast. Cover the chicken breasts with the remaining honey mustard mixture and then bake for 40 minutes at 400 degrees or until the juices from the chicken run clear.
