I am one of those pumpkin spice people. I love everything pumpkin! After all, fall is my favorite season and I love all the delicious flavors that autumn brings. I love to bake everything pumpkin including this easy baked oatmeal with pumpkin puree.

I have been busy getting into pumpkin spice season by making pumpkin whoopie pies, cast iron skillet pumpkin bread, and whole wheat pumpkin banana bread. Next on my list was something warm and filling on one of those cooler fall mornings. Baked oatmeal makes for such a wonderful and easy breakfast.

One of the best things about making baked oatmeal is that you can prepare it the night before, keep in the fridge, and then pop it in the next morning. It’s great to make on Sunday nights so you have a prepped breakfast to start the first few days of the week with. I also love how easy this oatmeal is clean up! Seriously, it isn’t all sticky like when you make oatmeal in a bowl.

What you need to make this baked oatmeal

To make this pumpkin baked oatmeal, you will need:

  • Pumpkin puree (about 15 ounces)
  • Old fashioned oats
  • Brown Sugar
  • Eggs
  • Salt
  • Pumpkin pie spice blend
  • Cinnamon
  • Nutmeg
  • All spice
  • Vanilla extract
  • Honey
  • Milk

You can substitute almost any type of milk for this recipe. Almond milk, coconut milk, or soy milk work well in this recipe.

Other recipe notes

You want to be sure to use pumpkin puree and NOT pumpkin pie filling. I don’t know why they always put the two so close together at grocery stores but it is a mishap to avoid!

This recipe is great to prep the night before. Note that this oatmeal may take a few extra minutes to cook from a cold refrigerator.

This baked oatmeal is also nice served with extra honey or a little maple syrup on top.

Ingredients

  • 1 can pumpkin puree (about 15 ounces) NOT pumpkin pie filling
  • 3 cups old fashioned oats (dry and unprepared)
  • 1/4 cup brown sugar
  • 2 eggs beaten
  • 1 tsp salt
  • 1 tbsp pumpkin pie spice blend
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp all spice
  • 1 tsp vanilla extract
  • 2 tbsp honey
  • 1 1/2 cups milk (may subsitute almond, coconut, or soy milk)

Instructions

  • Begin by preheating your oven to 350 degrees.
  • Spray an 8×8 casserole dish with non-stick spray.
  • In a medium mixing bowl combine the oatmeal, cinnamon, brown sugar, nutmeg, all spice, salt, and pumpkin pie spice. Mix well with a large spoon.
  • Combine the pumpkin puree, vanilla extract, milk, honey, and eggs in a large mixing bowl.
  • Add the oatmeal mixture to the large mixing bowl and mix well.
  • Pour into an 8×8 casserole dish and bake for 40 to 45 minutes or until edges are golden brown.
