Chicken Burrito Bowls with Chipotle Sauce

These chicken burrito bowls with chipotle sauce make an awesome and healthy addition to your meal prep routine. Whether you make a few of these for dinner or for lunch, the combination of flavors doesn’t get old and they will keep you full since they are packed with protein and veggies. I did include some shortcuts I take with these bowls including buying pre-marinated chicken fajita meat and prepared guacamole since they do take a bit of prep work. Because these burrito bowls have a lot of different parts, I suggest planning on having these for at least a few days as part of your meal prep.

 

 Ingredients:

1/4 cup of finely diced onion

1/2 cup of sliced onions

2 teaspoons of minced garlic

1 can of black beans

1 cup of white rice

1/4 cup finely diced cilantro

Three limes

1/2 cup of sliced green bell pepper

Olive oil

Package of chicken fajita meat

Package of prepared guacamole

1 cup of sour cream

1 tablespoon of hot sauce (I used Cholula original)

Salt

Shredded cheddar or Mexican blend cheese

Finely diced romaine lettuce

 

For the beans:

In a small pot add about two tablespoons of olive oil, the diced onions, and one teaspoon of minced garlic over low medium-low heat. Once the onions begin to become translucent add the beans and one to two teaspoons of salt, and let simmer. I always start the beans first; I find the longer they simmer the better they are even if they are canned black beans.

For the rice:

Cook the rice per the instructions on the package. While the rice is simmering add the juice of two of the limes and the finely diced cilantro.

For the veggies:

Add the sliced onions, bell peppers, and olive oil to a skillet. Cook on medium heat until onions are translucent and peppers are flexible.

For the chicken:

Cube the chicken and cook in a large skillet with olive oil for six to eight minutes or until the pieces are golden brown.

For the chipotle sauce:

In a bowl combine 1 cup of sour cream, 1 tablespoon of hot sauce (I used Cholula), 1 teaspoon of minced garlic, the juice of one lime, and a pinch of salt. Mix everything thoroughly with a whisk.

To complete your bowl:

Add a little of everything to your plate including the lettuce and cheddar. Complete your bowl by drizzling the chipotle sauce over everything.
