Baked lemon rosemary chicken thighs make for such an easy weeknight dinner. I think baking really brings out the flavor in chicken thighs but I’ve also used chicken breasts as well. It’s best to use fresh rosemary but you can use dried rosemary in a pinch. Everything comes together beautifully in this roasted chicken dish.

I really don’t think you can have too many recipes for chicken or too many easy weeknight dinner recipes. If you’re anything like me, you’re trying to figure out what to feed everyone day in and day out. Although I really have a passion for cooking sometimes I just want a simple recipe I can throw together.

This recipe is super easy, plus there’s not a lot of dishes to do. You really just need a good roasting or casserole pan for these baked lemon rosemary chicken thighs. You seriously can’t beat an easy recipe with simple ingredients, just a little prep, and a tiny bit of clean up!

What goes well with these baked chicken thighs?

Salad, green beans, fresh bread, mashed potatoes, almost any side goes well, especially roasted vegetables. This is a very versatile main dish that goes well with many different side dishes.

Ingredients needed for this recipe

For these baked lemon rosemary chicken thighs, you’ll need:

  • 4 chicken thighs
  • 2 large lemons
  • Fresh rosemary (about a handful)
  • 1 tablespoon of minced garlic
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • Olive oil for drizzling

How to make this recipe:

Begin by preheating your oven to 400 degrees. Spray a glass pan with nonstick cooking spray and then place your chicken thighs in the dish, add the garlic salt and pepper, and drizzle with olive oil. Juice one of the lemons and add it to the mixture.

Then slice the other lemon into thin slices and place over the chicken with the fresh rosemary. Bake for 40 minutes or until the juices run clear.
