Mediterranean Crockpot Chicken
This Mediterranean Crockpot Chicken dish is so easy but it tastes as though you slaved away for hours. It’s also a great recipe when you have some chicken breasts that you’re not sure what to do with.
1 box of Near East whole grain roasted garlic & olive oil couscous
4 boneless, skinless chicken breasts
1 can of stewed tomatoes
1 small can of mushrooms
3 cups of vegetable broth
4 chicken breasts
1 tablespoon of garlic salt
1 tablespoon of paprika
1 tablespoon of black pepper
2 tablespoons of olive oil
Begin by adding two tablespoons of olive oil to your crockpot. Add both the grain portion and seasoning packet from the couscous box. Season your chicken with the garlic salt, paprika, and black pepper and add it to the mix.
Add two cups of vegetable broth, the stewed tomatoes with their juice, and the mushrooms with their juice.
Cook on low for five to six hours, stirring every few hours and add the additional one cup of vegetable broth if needed.
