Have you ever made an acorn squash in your crockpot? I love making acorn squash in my crockpot! It’s so easy and it really helps me make sure that my kids get their veggies in. I absolutely love my crockpot and find it’s such a useful tool in the kitchen. I also love making acorn squash in my slow cooker because it makes my entire house smell amazing!

Nothing says fall like a variety of squash. One of my favorites is acorn squash although I don’t think acorn squash always gets as much attention as butternut squash. I love to make this recipe for Thanksgiving. Using your crockpot during holiday meals is awesome because it can free up some much needed room in your oven.

Acorn squash in your crockpot makes the perfect side dish for dinner or I love making this to dice up and use in my roasted acorn squash and pancetta salad. It’s delicious!

How to make an acorn squash in your crockpot

Equipment

  • Crockpot

Ingredients

  • 1 whole acorn squash stem removed and slice in half
  • 2 tbsp brown sugar
  • 2 tbsp maple syrup
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 cup water

Instructions

  • Begin by spraying your slow cooker with non-stick spray.
  • Remove the stem and then slice your acorn squash in half and remove the seeds in the middle.
  • Add the cinnamon, nutmeg, and two tablespoons of maple syrup and two tablespoons of brown sugar to the squash.
  • Add the 1/4 cup of water to the bottom of your slow cooker to prevent any syrup or sugar from burning.
  • Cook on low for 4 to 6 hours or until the squash is no longer firm.
