Slow Cooker Savory Tomato Pot Roast
This pot roast recipe isn’t just your run of the mill pot roast recipe, it has a lot of flavor! With a bright flare of spicy notes such as cumin and turmeric and the tang of the tomato, it is sure to impress you. Chuck roast is also such a great cut of meat for the slow cooker. This slow cooker savory tomato pot roast is sure to impress your family and goes great with a crusty bread such as Cuban dinner bread.
2 pound boneless chuck roast
1 red onion finely chopped
2 small sweet potatoes peeled and cut into small pieces
2 carrots shaved and cut into small pieces
2 tablespoons of olive oil
2 heaping tablespoons of brown sugar
1 can of tomato sauce (15 ounces)
1 tablespoon of Dijon mustard
1 tablespoon of ground ginger
1/4 cup of white wine vinegar
1 teaspoon of cumin
1/2 teaspoon of turmeric
1 teaspoon of ground cloves
1/2 teaspoon of cayenne pepper
1 teaspoon of garlic salt (or more to taste)
1/4 cup of water
Black pepper to taste
Begin by spraying your slow cooker with a non-stick spray, add the olive oil and then add about half of the onions, carrots, and sweet potatoes to the bottom of your slow cooker. Rub the meat with garlic salt and black pepper and then place it on top of the vegetables. Add the tomato sauce and remaining spices, brown sugar, Dijon mustard, white wine vinegar, and water. Mix well and then add the other half of the onions, carrots, and sweet potatoes. Cook on low for six to eight hours or on high for four hours. Add more water if you have a larger piece of meat so that it does not dry out while cooking.
