For rolling the cookie dough
1cuppowdered sugar
¾cupwhite sugar
Instructions
Begin by combining the dry ingredients in a large mixing bowl and stir well.
Next, add in your wet ingredients. Mix with a hand mixer. Dough may seem crumbly at first but continue mixing until it is formed.
Chill the dough for at least thirty minutes before baking. Chilling for an hour or two is best. You can also chill the dough overnight, if needed.
Form the dough into balls (about 1 ½ tablespoons of dough) and roll them in the white sugar.
Next, roll them generously in the powdered sugar.
Add them to a baking sheet with parchment paper or a greased baking sheet.
Bake at 325 degrees for 10 to 12 minutes. Let them rest for five minutes before carefully and gently transferring them to a cooling rack. Let them cool before serving.
Notes
If you want your cookies to be very green, be sure to add a few drops of green food coloring.
Be sure to let the dough chill. Skipping the chilling may make the cookies too flat.
Be sure to bake the cookies at 325 degrees and not 350 degrees.
