Begin by preheating your oven to 250 degrees and lining a baking sheet with parchment paper (do not use wax paper).
Next, whisk the egg white and water together until frothy. Mix together the sugar, cinnamon, and salt in a separate bowl.
Add the pecans to a large bowl and cover with the egg white mixture. Pour the cinnamon mixture over and toss the pecans until they are well covered.
Transfer to the baking sheet. Bake for 55 to 60 minutes.
