Crockpot Cilantro Lime Chicken Tacos

This is a super easy crockpot recipe will be a hit on your next taco night.

  • Crockpot (slow cooker)


  • 3 boneless skinless chicken breasts
  • 1 can diced tomatoes with green chiles do not drain
  • 1 bunch cilantro (cleaned with stems removed) finely chopped
  • 1/4 cup lime juice
  • 1 packet taco seasoning
  • 1 cup low sodium chicken broth or stock


  • Spray your crockpot with non-stick spray and add the chicken breasts, cilantro, and taco seasoning.
  • Add the chicken broth and canned tomatoes with chiles (do not drain). Stir well and cook on low for 6 to 8 hours.
  • Shred the chicken using two forks and serve over flour tortillas with your favorite toppings such as sour cream, shredded cheese, diced onion, avocado, and salsa.
