Begin by cooking your tater tots per the directions on their bag. I baked my tater tots but if you want a true copycat recipe, feel free to fry them per the directions on the bag.
Next, heat your tortillas in a large skillet. Take a little bit of the butter a time and gently fry your tortillas in the skillet until warm and slightly toasted.
In another skillet, brown the pork breakfast sausage. Drain the fat and set aside to cool.
In a bowl, whisk your eggs and then stir the half and half in.
Cook the eggs and scramble well in a large skillet that has been sprayed with non-stick spray.
Next, assemble your burritos. Add equal amounts eggs, tater tots, breakfast sausage, one slice of cheese, salt and pepper to taste, jalapeño slices, diced white onion, and slices of roma tomatoes to each tortilla.
Add salsa if desired.
