These Christmas cowboy cookies are sure to be your new favorite Christmas treat. They're the perfect cookie to bring to holiday parties or treat neighbors and friends to.
½cupunsalted buttersoftened to room temperature (8 tablespoons or 1 stick)
½cupsugar
½cupbrown sugarpacked
½teaspoonbaking powder
¼teaspoonbaking soda
1large egg
1 ½teaspoonsvanilla extract
¼teaspoonsalt
1 ¼cupall purpose flour
1cupquick oats
1cupsweetened coconut flakes
½cupM&Ms (red and green)
½cupchocolate chips
Instructions
Preheat your oven to 375 degrees.
In a large mixing bowl combine the butter (softened to room temperature), brown sugar, sugar, and vanilla. Mix with a hand or stand mixer until well combined.
Next, add in the baking soda, baking powder, and all purpose flour. Mix with a hand or stand mixer until well combined.
Add in the oats, coconut flakes, M&Ms, and chocolate chips. Stir in using a large spoon until well combined.
Form large dough balls using about three tablespoons of dough. Place on a parchment paper lined (not wax paper) or well greased baking sheet. I did six per sheet. Leave room for the cookies to spread.
Bake at 375 degrees for 8 to 10 minutes. Let the cookies rest for 10 minutes before moving. This will help them finish baking.
