ground bison
2
small sweet potatoes

medium white onion
finely diced

kidney beans (about 15 ounces)
rinsed and drained

black beans (about 15 ounces)
rinsed and drained

tablespoons
minced garlic

diced tomatoes

tablespoons
tomato paste
2
tablespoons
chili powder

teaspoon
paprika

teaspoon
cumin
½
teaspoon
coriander
Salt and pepper to taste
Optional Garnishes
sour cream
shredded cheese
avocado
diced red onion
Instructions
Begin by browning the ground bison in a non-stick skillet over medium heat until the meat is thoroughly cooked.
Drain the fat from the meat and set aside.
While the ground bison is cooling, peel the sweet potatoes and cut them into small bite size pieces.
Spray your slow cooker with non-stick spray and add the sweet potatoes, onion, and garlic to your slow cooker.
Add the meat, garlic, diced tomatoes (with juice), and tomato sauce.
Add the beans.
Add the remaining spices and stir well. Cook on low for 6 to 8 hours.
Serve with sour cream, shredded cheese, avocado, and diced red onion.
