This cheesy beef zucchini bake is easy enough to throw together for a busy weeknight dinner. It is also a great dish to get in extra veggies or if you're watching your carbs.
In a large skillet add the olive oil and onions. Once the onions begin to soften add the ground beef and season with garlic, salt, and pepper.
Let the meat brown and while the meat is cooking, preheat your oven to 350 degrees.
Slice the zucchini into thin pieces and then grease a 9 x 13 cooking pan. In the pan, add a layer of zucchini and sprinkle with Italian seasoning.
Once the meat and onions are cooked, drain any fat and add the jar of tomato sauce to the skillet and turn the heat off.
Add tomato sauce mixture to your first layer of zucchini then add half of the cheese.
Add another layer of zucchini sprinkled with Italian seasoning on top and then add the remaining cheese. Cover with foil and bake for 25 minutes then remove the foil and bake for additional 5 to 10 minutes.
