Chai Baked Oatmeal
This chai baked oatmeal is a delicious recipe inspired by one of my favorite drinks (a chai tea latte). This warm and comforting oatmeal is fabulous on a cool day.

Ingredients

quick cooking oats

tablespoons
brown sugar

white sugar
1 ½

milk (coconut, almond, or soy all work fine as well)

large eggs
beaten

teaspoon
baking powder

teaspoon
baking soda
1 ½
teaspoons
vanilla extract

cinnamon

nutmeg

cardamom

all spice

ginger

ground cloves

Instructions
Begin by preheating your oven to 350 degrees and spray a 8 x 8 pan with non-stick spray.
In a large mixing bowl combine all the dry ingredients. Stir well to distribute the spices evenly.
Next add in the wet ingredients and stir very well with a large spoon until everything is well mixed.
Spread into an 8 x 8 pan. Bake for 25 to 30 minutes or until set in the middle.
Serve with honey, raisins, or extra milk, if desired.
