Blueberry Pie Baked Oatmeal

  • Deep dish pie pan (or 8 x 8 baking dish)


For the baked oatmeal

  • 2 cups oatmeal (quick or rolled)
  • ½ cup sugar
  • 2 tbsp light brown sugar
  • 1 tsp pure vanilla extract
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 large egg beaten
  • 1 ½ cups milk you can substitute unsweetened almond milk, if needed
  • 1 ¼ cup blueberries fresh or frozen

For the crumble topping

  • 5 tbsp unsalted butter
  • cup all purpose flour
  • cup sugar


  • Preheat your oven to 350 degrees.
  • In a small bowl, combine the 5 tablespoons of butter, ⅓ cup of flour, and ⅓ cup sugar. Use either a pastry cutter or a fork to combine all the ingredients. The crumble topping should resemble pea like crumbs. Set aside.
  • In a large mixing bowl combine the oatmeal, baking powder, sugar, brown sugar, and salt. Stir well with a large spoon. Next, add in your wet ingredients. Stir until everything is well mixed and then transfer to a greased deep dish pie pan. Top with the crumble mixture.
  • Bake at 350 degrees for 30 to 35 minutes. After, use your broil setting for about one minute to brown the crumble topping.
