Blueberry Pie Baked Oatmeal
This blueberry pie baked oatmeal is made with wholesome oats, juicy blueberries, and a delicious crumble topping.

For the baked oatmeal
- 2 cups oatmeal (quick or rolled)
- ½ cup sugar
- 2 tbsp light brown sugar
- 1 tsp pure vanilla extract
- 1 tsp baking powder
- ¼ tsp salt
- 1 large egg beaten
- 1 ½ cups milk you can substitute unsweetened almond milk, if needed
- 1 ¼ cup blueberries fresh or frozen
For the crumble topping
- 5 tbsp unsalted butter
- ⅓ cup all purpose flour
- ⅓ cup sugar
Preheat your oven to 350 degrees.
In a small bowl, combine the 5 tablespoons of butter, ⅓ cup of flour, and ⅓ cup sugar. Use either a pastry cutter or a fork to combine all the ingredients. The crumble topping should resemble pea like crumbs. Set aside.
In a large mixing bowl combine the oatmeal, baking powder, sugar, brown sugar, and salt. Stir well with a large spoon. Next, add in your wet ingredients. Stir until everything is well mixed and then transfer to a greased deep dish pie pan. Top with the crumble mixture.
Bake at 350 degrees for 30 to 35 minutes. After, use your broil setting for about one minute to brown the crumble topping.
