This cheesy beef zucchini bake recipe is great if you’re trying to eat more vegetables or if you are watching your carb intake. It’s super easy to make and is perfect for a weeknight dinner. If you’re not watching your carbs, it goes really well with Cuban dinner bread. I usually serve this on its own or with a fresh salad or sliced tomatoes that have been sprinkled with a little salt and pepper.

What ingredients do I need for this recipe?

To make this cheesy beef zucchini bake you will need:

  • Tomato sauce
  • Zucchini
  • Ground beef
  • White onion
  • Garlic
  • Salt
  • Black pepper
  • Italian seasoning
  • Olive oil
  • Cheddar cheese

Do I have to use ground beef?

No not all! You can also use ground turkey or bison in this recipe.

What sides are good with this recipe?

A crusty white bread, mashed potatoes or mashed cauliflower, rice, beans, really the options are endless! I like to serve this with a fresh salad and freshly sliced tomatoes from our garden.

How do I make this recipe?

To make this zucchini bake first start by gathering and measuring out your ingredients. You will need:

  • 1 jar of tomato sauce
  • 2 zucchinis thinly sliced
  • 1 pound of ground beef or ground turkey
  • ¼ cup of finely diced onion
  • 1 teaspoon of garlic
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • 1 teaspoon of Italian seasoning
  • 2 tablespoons of olive oil
  • 1 cup of shredded cheddar cheese

In a large skillet add  the olive oil and onions. Once the onions begin to soften add the ground beef and season with garlic, salt, and pepper. Let the meat brown and while the meat is cooking, preheat your oven to 350 degrees. Slice the zucchini into thin pieces and then grease a 9 x 13 cooking pan. In the pan, add a layer of zucchini and sprinkle with Italian seasoning. Once the meat and onions are cooked, drain any fat and add the jar of tomato sauce to the skillet and turn the heat off. Add tomato sauce mixture to your first layer of zucchini then add half of the cheese. Add another layer of zucchini sprinkled with Italian seasoning on top and then add the remaining cheese. Cover with foil and bake for 25 minutes then remove the foil and bake for additional 5 to 10 minutes.

Ingredients
