I've used vegetable oil, canola oil, and coconut oil before. Any neutral oil will work but I prefer coconut oil.

optional
Instructions
Preheat your oven to 350° and grease a 9 x 13 inch baking dish.
Add the dry ingredients to a large mixing bowl and gently stir.
2 cups sugar,
1 cup all purpose flour,
⅔ cup cocoa powder,
½ teaspoon baking powder,
½ teaspoon salt
Next, add in the wet ingredients and mix until well combined. Do not over mix or the brownies will become cakey.
½ cup oil,
½ cup unsalted butter,
1 teaspoon vanilla extract,
4 large eggs
Pour the batter into the baking dish and bake for about 30 to 35 minutes or until a toothpick comes out clean from the center.
