These Hobo Cookies are a delightful vintage recipe. They are a buttery and sweet cookie, loaded with coconut flakes, oats, Corn Flakes, pecans, chocolate, and more!
Begin by preheating your oven to 350° F. In a large mixing bowl, cream together your vanilla extract, butter (softened to room temperature, sugar, and brown sugar).
1 cup unsalted butter, 1 cup sugar, 1 cup brown sugar, 1 teaspoon vanilla extract
Next, add in the eggs, oats, flour, baking soda, baking powder, and salt. Mix until well combined.

Stir in the Corn Flake cereal, coconut flakes, and chocolate chips.

Roll into large dough balls. I used about ¼ cup, don't worry if the Corn Flakes get a little crushed. Place on a greased or parchment paper lined baking sheet. I recommend doing four dough balls per baking sheet due to their size.
Bake for 12 to 15 minutes or until edges are golden. Let the cookies rest on the baking sheet for 5 to 10 minutes before transferring to a cooling rack.
