These Oatmeal Blondies are loaded with wholesome oats and are so buttery, gooey, and sweet. They're quick and easy to make and are the perfect dessert for a crowd.
Preheat your oven to 350° and spray your 9 x 13 inch baking dish with non-stick spray.
Cream together your butter (softened to room temperature), vanilla extract, brown sugar, and sugar.
1 cup unsalted butter, ¾ cup light brown sugar, ¾ cup sugar, 1 teaspoon vanilla extract
Next, add in the remaining ingredients except for the chocolate chips and nuts. Mix until well combined but do not over mix.
2 large eggs, 2 cups old fashioned oats, 1 ½ cups all purpose flour, 1 teaspoon baking soda, 1 teaspoon baking powder, ½ teaspoon salt
Stir in the chocolate chips and nuts (if desired) with a large spoon.

Add the batter to your baking dish and gently pat it down. The batter may seem thin but it will rise as it bakes. Bake for 30 to 35 minutes or until a toothpick comes out clean from the middle.
Let the bars cool for 5-10 minutes before cutting and serving.
