Instructions
Add your cereal and one cup of marshmallows to a large mixing bowl.
8 cups rice cereal, 16 ounces mini marshmallows (divided - one cup set aside)
In a large pot melt the butter and then whisk in the brown sugar, salt, and vanilla extract.
½ cup unsalted butter, ⅓ cup light brown sugar, ¼ teaspoon salt, 1 teaspoon vanilla
Next, add in the remaining marshmallows. Cook on medium-low while stirring continuously until everything is melted and well combined.

Pour the melted marshmallow mixture over the cereal and mix with a spatula until well combined.
Pour the mixture into a well greased 9 x 13 inch pan and then spray your hands with non-stick spray. Gently pat the treats into place. Alternatively, you can use a spatula coated with non-stick spray or wax paper if you don't want to use your hands. Be sure to be gentle, if you pat them down too hard they will become tough.
Let them sit for about one hour before serving.
