This Amish Cake is a popular cake recipe among the Amish and Mennonite communities. It is a cake made from oatmeal, coconut, and pecan topping. It is sure to please!
9 x 13 inch pan I recommend using ceramic or aluminum. Glass does not heat as evenly.

For the cake
1cupquick oats
1 ¼cupwater
½cupunsalted butter
1cupbrown sugar
1cupwhite sugar
2large eggs
1teaspoonvanilla extract
1 ⅓cupall purpose flour
1teaspoonbaking soda
1teaspooncinnamon
¼teaspoonnutmeg
½teaspoonsalt
For the topping
6tablespoonsmelted butter
¼cupmilk
¾cupchopped pecans or walnuts
1cupbrown sugar
1cupcoconut flakes
Instructions
Begin by preheating your oven to 350 degrees. Spray your 9 x 13 inch pan with non-stick spray.
In a large or medium pot bring the water to a boil and add the oatmeal. Combine and let cook for one minute. Set aside to cool.

In a large mixing bowl combine the butter, brown sugar, white sugar, vanilla extract, and eggs. Cream together with a mixer.
½ cup unsalted butter, 1 cup brown sugar, 1 cup white sugar, 2 large eggs, 1 teaspoon vanilla extract
Add in the oatmeal mixture.
Mix in the flour, baking soda, cinnamon, nutmeg, and salt. Mix until well combined.

Pour into a 9 x 13 inch pan. Bake for 30 to 33 minutes or until a toothpick comes out clean.
Combine the ingredients for the topping together in a bowl.
6 tablespoons melted butter, ¼ cup milk, ¾ cup chopped pecans or walnuts, 1 cup brown sugar, 1 cup coconut flakes
Once baked, carefully (the pan will be hot) add the topping. Broil for 30 seconds to 1 minute to toast the topping. Carefully watch the cake as your oven will be very hot on broil. Watch very carefully!
