This Amish cake is a tried and true, old fashioned Amish recipe. It is a great recipe for using leftover oatmeal from breakfast.

🥣Ingredients needed

The ingredients needed to make Amish cake.

For this cake:

  • Quick oats: The base of the cake.
  • Butter: I recommend using unsalted butter for baking. If you live near an Amish store, using Amish butter will give you a very authentic result.
  • Sugar
  • Brown sugar
  • Eggs
  • All purpose flour
  • Baking soda
  • Cinnamon and nutmeg: To give the cake a little spice.
  • Salt
  • Vanilla extract

For the topping:

  • Butter
  • Coconut flakes
  • Brown sugar
  • Pecans: You can also use walnuts.
  • Milk or half and half

You will also need a 9 x 13 inch pan.

You can substitute walnuts or leave the nuts out all together.

⏲️ Recipe instructions (step by step guide)

Begin by preheating your oven to 350 degrees. Spray your 9 x 13 inch pan with non-stick spray.

In a large or medium pot bring the water to a boil and add the oatmeal. Combine and let cook for one minute (image 1). Set aside to cool.

In a large mixing bowl combine the butter, brown sugar, white sugar, vanilla, and eggs. Cream together with a mixer (image 2).

Add in the oatmeal mixture. Mix in the flour, baking soda, cinnamon, nutmeg, and salt. Mix until well combined (image 3).

Pour into a 9 x 13 inch pan (image 4). Bake for 30 to 33 minutes or until a toothpick comes out clean.

Combine the ingredients for the topping together in a bowl (image 5).

Once baked, carefully (the pan will be hot) add the topping. Broil for 30 seconds to 1 minute to toast the topping (image 6). Carefully watch the cake as your oven will be very hot on broil. Watch very carefully!

👩🏻‍🍳 Tips

  • I recommend using a ceramic or aluminum pan. Glass does not heat as evenly.
  • You can double the topping, if desired. This will make your cake more decadent.
  • Watch the topping very carefully while you broil it. Be very careful not to burn it.

Ingredients
  

For the cake

  • 1 cup quick oats
  • 1 ¼ cup water
  • ½ cup unsalted butter
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ⅓ cup all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ teaspoon salt

For the topping

  • 6 tablespoons melted butter
  • ¼ cup milk
  • ¾ cup chopped pecans or walnuts
  • 1 cup brown sugar
  • 1 cup coconut flakes

Instructions
