Instructions
Begin by preheating your oven to 375 degrees. Line a baking sheet with parchment paper (not wax) or grease it well.
Cream together the shortening, butter, sugar, brown sugar, and vanilla.

Beat in the honey and egg.

Next add in the remaining ingredients except for the chocolate chips. Mix well but do not over mix the dough (this causes flat cookies).

Stir in the chocolate chips with a large spoon. Form balls of dough (about 2 ½ tablespoons). This recipe yields about 10 to 12 large cookies.

Bake for 8 to 10 minutes in a fully preheated oven. Let the cookies rest for 10 minutes on the baking sheet before transferring to a wire rack. Let rest an additional 10 minutes before serving.
