I love creating and testing cookie recipes! Cookies are one of my family’s favorite treats. These chocolate chip cookies with honey are one of our new favorites. They are a soft, chewy cookie that needs no chill time. These cookies use honey in addition to sugar and brown sugar.

I tested this recipe several times and I love using the combination of butter, butter flavored shortening, and honey. Together these ingredients work well together to give you a soft, chewy cookie that’s sweet but not overly sweet.

The honey in these cookies give the cookies a great flavor as well as a softer texture. The honey is used in addition to sugar and brown sugar so this is not a sugar free cookie.

🥣 Ingredients needed

The ingredients needed to make chocolate chip cookies with honey.

For these cookies, you will need:

  • Flour
  • Baking soda and baking powder: For the best results make sure you use fresh baking soda and baking powder.
  • Corn starch: To help thicken up the cookies.
  • Salt
  • Butter: I recommend using unsalted butter in baking. Salted butter can contain more water content than unsalted and change the results of your baking. You are also better able to control the salt going into the dough since salt content in salted butter will vary brand to brand.
  • Butter flavored shortening: You can substitute regular shortening but I feel like the butter flavored shortening gives the cookies the best taste.
  • Sugar and brown sugar
  • Egg
  • Honey
  • Chocolate chips: I used semi-sweet but you can use your favorite (dark or milk chocolate).

🌰 Variations

You can add walnuts, pecans, or switch the semi-sweet chocolate to your favorite (like dark or milk chocolate).

M&Ms or mini Reese’s peanut butter cups are great in these cookies too.

⏲️ Recipe instructions (step by step guide)

Begin by preheating your oven to 375 degrees. Line a baking sheet with parchment paper (not wax) or grease it well.

Cream together the shortening, butter, sugar, brown sugar, and vanilla (image 1).

Beat in the honey and egg. Then add in the remaining ingredients except for the chocolate chips (image 2). Mix well but do not over mix the dough (this causes flat cookies).

Stir in the chocolate chips with a large spoon (image 3). Form balls of dough, about 2 ½ to 3 tablespoons each (image 4). This recipe yields about 10 to 12 large cookies.

Bake for 8 to 10 minutes in a fully preheated oven. Let the cookies rest for 10 minutes on the baking sheet before transferring to a wire rack. Let rest an additional 10 minutes before serving.

👩🏻‍🍳 Tips for the BEST Cookies

  • Make sure your butter is softened to room temperature (not melted or still very cold) so that it creams in nicely.
  • The cookies may not look completely done when you take them out of the oven. Let the cookies rest on the baking tray then rest for ten additional minutes. This will help them finish baking and also keep them very soft.
  • Do not over mix the cookie dough, this may cause your cookies to become too flat.
  • For the best results, bake one batch at a time on the center rack of your oven.

Store any leftover cookies in an airtight container at room temperature. They will be good for up to four days after baking.

Why do chocolate chip cookies flatten and spread?

From all my cookie baking experience, the main culprit for flat cookies would be:

– Expired baking soda or baking powder
– Over mixing the dough
– Putting your dough on a hot baking sheet
– Not an accurate amount of flour. Be sure to fluff and scoop your flour.

Is it better to use butter or oil in chocolate chip cookies?

Butter will yield the best taste and texture over oil.

Can I freeze this cookie dough?

Yes, you can. I recommend rolling the dough into balls and placing the dough between parchment paper. Let the dough defrost before baking.

Is butter or Crisco better for cookies?

A combination of butter and Crisco will give you both the best taste and texture for a cookie.

What makes cookies chewy butter or shortening?

Shortening will give you a chewy texture but the taste is kind of bland. I recommend using a combination of butter and butter flavored shortening (Crisco) for the best results.
