Begin by preheating your oven to 250 degrees and lining a baking sheet with parchment (not wax) paper.
Next, whisk your egg white and vanilla together.
1 egg white, 1 teaspoon vanilla extract
In a separate bowl, combine the cinnamon, sugar, brown sugar, nutmeg, and salt. Mix well.
½ cup white sugar, ½ cup brown sugar, 2 teaspoons ground cinnamon, 1 pinch nutmeg, ¼ teaspoon salt
Add the almonds to the egg white and vanilla mixture. Mix well.
3 cups raw almonds
Pour the cinnamon sugar mixture over the almonds. Mix well.
Spread the almonds out on the parchment paper lined baking sheet. Be sure to spread them out evenly.
Bake for one hour and fifteen minutes. Every twenty minutes stir and flip the almonds. Let the almonds cool and harden before serving.
