These Christmas almonds are a tried and true holiday favorite. I have been making them for almost ten years now. They are a wonderful treat to gift to friends, family, and neighbors too.
These candied Christmas almonds also smell amazing while they bake. They will definitely make your home smell like Christmas time.
🌰 Ingredients needed
For these almonds, you will need:
- Egg white: You will need an egg white from one large egg. The egg white will help the coating stay on the almonds instead of hands and fingers.
- Vanilla extract: As always, I recommend using pure vanilla extract if you can.
- Brown sugar and white sugar
- Cinnamon, salt, and nutmeg: The spices for the recipe.
- Almonds: You will want to use raw almonds. Do not use toasted almonds.

You can swap another nut like pecans or walnuts. You can even do a mix of almonds and pecans or almonds and walnuts.

You will need a large baking sheet, two medium mixing bowls, and parchment paper (not wax paper) for this recipe.
⏲️ Recipe instructions (step by step guide)
Begin by preheating your oven to 250 degrees and lining a baking sheet with parchment (not wax) paper.
Next, whisk your egg white and vanilla together (image 1). In a separate bowl, combine the cinnamon, sugar, brown sugar, nutmeg, and salt (image 2). Mix well.
Add the almonds to the egg white and vanilla mixture (image 3). Mix well.
Pour over the cinnamon sugar mixture (image 4). Mix well. Spread the almonds out on the parchment paper lined baking sheet (image 5). Be sure to spread them out evenly.
Bake for one hour and fifteen minutes. Every twenty minutes stir and flip the almonds. Let the almonds cool and harden before serving.
