Chicken salad is one of our go-to lunches at my house. This copycat McAlister's chicken salad is one of our favorites. Especially during the hot summer months!
salt and pepperto taste (I used just a little maybe a pinch or two of each)
½ribcelerydiced
¼cupcraisins
2tablespoonspecan pieces
2tablespoonshoney
Instructions
Shred your chicken and remove the skin. I used a hand mixer to easily shred it. Add the mayonnaise, honey and seasonings. Mix well.
Add the remaining ingredients and mix well.
Serve as a sandwich, with crackers, on a fresh green salad.
Notes
*You can also substitute baked or boiled shredded chicken breast. Leftovers will keep for up to four days after making. Nutritional information is an estimate only.
