In about 20 minutes, you can have this tender and delicious Instant Pot Blackened Chicken ready! This chicken is so easy to make in your pressure cooker.
Set your Instant Pot to sauté mode and add your cooking oil (I used olive oil). Season your chicken with the blackened seasoning. Sauté each side for one minute.

Carefully remove your chicken and set aside. Add one up of water or chicken broth.

Add the trivet and set your chicken breast on top. Secure the lid to your Instant Pot. Turn the valve to sealing pressure.
Set to pressure cook (or manual cook) and cook at high pressure for 8 minutes for fresh chicken. For frozen chicken, select 10 to 12 minutes (go up to 12 minutes if you have large chicken breast).
Once the cooking cycle is complete, carefully do a quick release.

1 ½ teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried thyme
1 teaspoon black pepper

1 teaspoon dried oregano
Note: If you are using an 8 quart pressure cooker add two cups of liquid. Store any leftover chicken in an airtight container in your fridge. It will be good for 3 to 4 days after making.If you’d like freeze any leftovers, place them in a freezer safe container. Defrost in the fridge when you are ready to use. Leftover chicken will be good for 3 months in your freezer.
