I’m a huge fan of Instant Pot recipes. They make this busy mom’s life much easier. This Instant Pot Blackened Chicken is such a quick and easy dinner idea. You can use fresh or frozen chicken too.

This is a quick and easy way to make blackened chicken. You can use fresh, defrosted, or frozen chicken for this recipe too.

You can use store bought blackened seasoning or there are instructions on how to make your own.

🍗 Ingredients needed

The ingredients needed to make instant pot blackened chicken.

For this recipe, you will need:

  • Chicken breast: You will need 2-3 large boneless and skinless chicken breast.
  • Blackened seasoning: I used a store bought blackened seasoning but you can make your own with the recipe below.
  • Water or chicken broth
  • Oil: I used extra virgin olive oil. The oil is for sautéing the chicken.

🧂 Blackened Seasoning Recipe

Make your own blackened seasoning by combining the following spices:

  • 1 ½ teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • ½ teaspoon cayenne pepper
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano

🔪 Equipment needed

You will need a 6 quart or larger Instant Pot (pressure cooker) and the trivet (wire rack).

⏲️ Recipe instructions (step by step guide)

Set your Instant Pot to sauté mode and add your cooking oil (I used olive oil). Season your chicken with the blackened seasoning. Sauté each side for one minute (image 1).

Carefully remove your chicken and set aside. Add one up of water or chicken broth. Note: If you are using an 8 quart pressure cooker add two cups of liquid.

Add the trivet and set your chicken breast on top (image 2). Secure the lid to your Instant Pot. Turn the valve to sealing pressure.

Set to pressure cook (or manual cook) and cook at high pressure for 8 minutes for fresh chicken. For frozen chicken, select 10 to 12 minutes (go up to 12 minutes if you have large chicken breast).

Once the cooking cycle is complete, carefully do a quick release.

🥗 What to serve with this recipe

This blackened seasoning goes great over pasta and Alfredo sauce. Two of my favorite Alfredo recipes are this Copycat Maggiano’s Alfredo and this Copycat Fazoli’s Alfredo.

👩🏻‍🍳 Tips

  • You can use store bought blackened seasoning or make your own.
  • There’s no need to defrost anything. You can use frozen chicken for this recipe, if you like.

🥡 How to store leftovers

Store any leftover chicken in an airtight container in your fridge. It will be good for 3 to 4 days after making.

If you’d like freeze any leftovers, place them in a freezer safe container. Defrost in the fridge when you are ready to use. Leftover chicken will be good for 3 months in your freezer.

Blackened chicken does not mean burnt chicken. It refers to a method of cooking with blackened seasoning. Blackened seasoning is applied to the chicken then it is seared on each side and then cooked.

What is blackened chicken made of?

Blackened chicken is made from blackened seasoning and chicken. It is seared on the outside.

Is blackened just Cajun?

Blackened recipes are of Cajun origin but blackened seasoning is different than Cajun seasoning. Cajun seasoning is usually spicier than blackened seasoning.

Ingredients
