These sourdough discard zucchini fritters are a great way to use your discard and any extra zucchinis from your garden too. They are a wonderful summer side dish.
Begin by grating your zucchini. Pat with a paper towel to reduce the moisture content.
In a large bowl, combine all of the ingredients and stir well.
Heat two tablespoons of cooking oil on your skillet and form patties. Fry over medium-high heat until golden brown on each side.
Transfer to a plate with paper towels to drain the oil and let cool. Serve with sour cream dipping sauce, if desired.
