For this recipe, you will need:
- Zucchini: I used one medium zucchini.
- All purpose flour
- Sourdough discard
- Egg: You will need one large egg.
- Garlic powder, salt, and pepper: To season the fritters with.
- Shredded Parmesan cheese
- Oil for frying: I used olive oil.

Begin by grating your zucchini. For this recipe it was about one medium zucchini for me. Pat the grated zucchini down with a paper towel to remove any excess moisture.
In a large bowl, combine all of the ingredients (image 1).
Heat two tablespoons of cooking oil on your skillet and form patties (image 2).
Fry over medium-high heat until golden brown on each side (image 3).
Transfer to a plate with paper towels to drain the oil and let cool (image 4). Serve with sour cream dipping sauce, if desired.

You can serve these zucchini fritters with a simple sour cream dipping sauce. To make the sauce, add a few tablespoons of sour cream then add salt, pepper, paprika, and a little garlic powder to taste.
