These Italian sausage and cream cheese stuffed peppers are a great twist on the classic stuffed pepper recipe. If you want to try something a little different for dinner then try this recipe. It’s also a great recipe if you’re watching your carbs.

I served these peppers with sliced fresh tomatoes and black eyed peas because that’s what I had on hand but they would also go well with a variety of other sides! Some things that come to mind are garlic bread, baked potatoes, or salad. If you are watching your carbs these stuffed peppers are even great on their own!

Ingredients

3 bell peppers (I used green and orange)

½ pound of Italian sausage

½ block of cream cheese

½ cup of shredded mozzarella cheese

¼ cup of diced onion

Salt and pepper

Begin by preheating your oven to 400 degrees and then wash the bell peppers. Slice the bell peppers length-wise, remove the membranes, add a pinch of salt and pepper to season them, and put them on a greased oven safe tray or dish. In a large non-stick skillet, brown the Italian sausage with the onions. Once the sausage is browned, drain any excess fat, add the cream cheese to the skillet and mix well.
