Chili Loaded Baked Potatoes an Easy Weeknight Dinner
Looking for something fast and easy to throw together for dinner? I love this super simple Chili Loaded Baked Potatoes recipe for when I’m busy or don’t feel like cooking. I also really like this recipe because there is not a lot of clean-up involved. I usually always keep a can of beans, a can of chili, and potatoes on hand. Let’s take a look at the line up below! You can use the microwave for everything or warm the chili up on your stove.
1 can of chili (your choice- I had Hormel Naturals because that was what was on sale)
1 can of beans (optional)
Two large potatoes
1/2 cup shredded cheddar cheese
I prefer to add an additional can of kidney or pinto beans to canned chili to bulk things up but it’s up to you and your personal preferences. I like to combine the chili and beans on the stove top and begin to heat those while I microwave the potatoes or you can also do everything in the microwave if you want. Simply add the chili, sour cream and cheddar cheese or any other fixings on top of your potatoes and enjoy your easy weeknight meal!
