Microwave Chili Loaded Baked Potatoes

Looking for something fast and easy to throw together for dinner? This super simple chili loaded baked potatoes recipe is perfect when you’re not in the mood to cook a big meal. No oven needed! You can microwave everything.

I usually always keep a can of beans, a can of chili, and potatoes on hand. Let’s take a look at the line up below! You can use the microwave for everything or warm the chili up on your stove. This is the perfect easy peasy recipe for when you’re tired or just don’t feel like cooking much.

I used to live in a town that had a little restaurant that made all types of crazy baked potatoes. There were broccoli and cheese baked potatoes, barbecue baked potatoes, Sheppard’s pie baked potatoes, and even sweet Thai chicken baked potatoes. The options were really endless and I miss that place so much! There’s really nothing like a good baked potato and even with all the options my go-to for making a baked potato a meal will be a chili loaded baked potato!

Ingredients needed

Chili Loaded Baked Potatoes ingredients

For this recipe you will need:

  • Canned chili: I used Hormel but you can use your favorite barnd.
  • Canned beans: This optional but I like to add an extra can of kidney beans to my chili. It helps stretch the meal out.
  • Potatoes: You’ll need two large Idaho potatoes for this recipe.
  • Shredded cheddar, sour cream, chives, and salt pepper: To top the potatoes with.

How to make this recipe

I prefer to add an additional can of kidney or pinto beans to canned chili to bulk things up but it’s up to you and your personal preferences.

I like to combine the chili and beans on the stove top and begin to heat those while I microwave the potatoes or you can also do everything in the microwave if you want.

Simply add the chili, sour cream and cheddar cheese or any other fixings on top of your potatoes and enjoy your easy weeknight meal!

Equipment

  • Microwave

Ingredients
  

  • 1 can chili
  • 2 large russet potatoes
  • ½ cup shredded cheddar cheese
  • sour cream
  • salt and pepper to taste

Instructions
 

For the microwave

  • To make the potatoes in the microwave, wash your potatoes and dry them.
  • Poke them with a fork a few times and then use your microwave's potato setting to cook your potatoes.
  • You can heat the chili on the stove or also in microwave once your potatoes are done.
  • Add the chili and other fixings on top of the potato.

For the oven

  • To bake the potatoes in the oven, wash your potatoes and dry them.
  • Poke them with a fork a few times and then wrap them in aluminum foil.
  • Bake them at 400 degrees for about an hour.
  • Heat the chili on your stovetop or microwave.
  • Add the chili and other fixings on top of the potato.

    I have not tried your exact recipes, but sound wonderful! By the way after reading about the potato restaurant was it by chance named “Ike’s”
