Luscious chocolate, bits of gooey caramel, and wholesome oats all come together in these amazing and decadent Carmelita Cookies! They are a delicious cookie version of one your favorite dessert bars.

As fall and winter are approaching quickly, I’ve seen tons of delicious looking Carmelita Bar recipes on Pinterest and Facebook. Since I am a huge fan of making delicious Cookie Recipes and sharing them with my readers, I decided to recreate the delicious caramel chocolate dessert bars into a yummy oatmeal cookie.

❤️ Why you’ll love this recipe

  • Grab and go: While Carmelitas are absolutely delicious, cutting and serving them can be messy. These cookies are the perfect grab and go treat.
  • Easy: You need just one bowl and there’s no chill time. In about 30 minutes, you’ll have a batch of freshly baked cookies.
  • Taste: These are one of the best oatmeal cookies ever. They’re thick, perfectly sweetened and spiced, and loaded with tons of chocolate chips and caramel bits.

🥣 Ingredients needed

For these cookies, you will need:

  • Unsalted butter: I recommend using unsalted butter in almost all of my cookie recipes. Salted butter has a higher water content than unsalted butter which may cause problems with the cookie dough. You can also control the amount of salt going into the recipe since salt content varies from brand to brand as well.
  • Brown sugar and sugar
  • Eggs
  • Vanilla
  • All purpose flour
  • Baking soda and baking powder
  • Corn starch: To help the cookies thicken.
  • Cinnamon and nutmeg
  • Salt
  • Quick oats
  • Chocolate chips and caramel bits

🧂Variations

You can add in chopped pecans or walnuts if you like. You can also add caramel sauce on top, if desired.

🔪 Equipment needed

You will need a hand or stand mixer, large mixing bowl baking sheet, and parchment paper (not wax paper). I strongly recommend using parchment paper or a silicone baking mat with these cookies since caramel has a tendency to burn and stick. Using parchment paper or silicone mat will prevent this and make clean up so much easier.

⏲️ Recipe instructions (step by step guide)

Begin by preheating your oven to 350° F and lining a baking sheet with parchment paper (not wax paper) or a silicone baking mat.

With your hand or stand mixer, cream together the butter, vanilla, brown sugar, and sugar.

Next, add in the remaining ingredients except for the chocolate chips and caramel bits. Mix until everything is well combined.

With a large spoon stir in the chocolate chips and caramel bits. Using a large cookie scoop, form large dough balls and place on your parchment paper lined baking sheet.

Bake for 13 to 16 minutes or until the edges are golden. Let the cookies rest for 10 to 15 minutes on the baking sheet before transferring to a cooling rack. If using a smaller cookie scoop, you will need to reduce your bake time.

  • I strongly recommend using parchment paper or a silicone baking for these cookies since the caramel can stick to your baking sheet.
  • Let the cookies rest on the baking sheet before transferring. This will help them firm up.
  • If you use a smaller cookie scoop (I used a large cookie scoop), you will need to reduce your bake time.

Ingredients
  

  • 14 tablespoons unsalted butter softened to room temperature
  • ¾ cup brown sugar packed
  • ½ cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla
  • 1 ½ cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons corn starch
  • ½ teaspoon cinnamon
  • 1 pinch nutmeg
  • 1 teaspoon salt
  • 3 cups quick oats
  • 1 cup caramel pieces
  • ½ cup chocolate chips

Instructions
 

  • Begin by preheating your oven to 350° F and lining a baking sheet with parchment paper (not wax paper) or a silicone baking mat.
  • With your hand or stand mixer, cream together the butter, vanilla, brown sugar, and sugar.
