Copycat Great Harvest Cookies

These Copycat Great Harvest Cookies taste just like the real deal. They are loaded with wholesome oats, whole wheat flour, and chocolate chips! You can easily recreate one of your bakery favorites at home with this copycat recipe.

I’m a huge fan of Copycat Recipes. I get excited every time I’m able to share another copycat recipe with my readers. These cookies were a request in The Copycat Restaurant Recipes Facebook Group and I finally got around to not only going to a Great Harvest but trying their cookies too. I will definitely be doing a few more copycat recipes from them!

🍪 Why you’ll love these cookies

  • Whole wheat flour: Per Great Harvest all of their cookies are made with 100% whole wheat flour. This recipe uses 100% whole wheat flour as well.
  • Texture: These cookies have crisp edges and chewy middles just like the originals.
  • Mix-ins: You can use this cookie dough base for their oatmeal chocolate chip, oatmeal raisin, or oatmeal with caramel chips all you need to do is change to your desired mix in.

🥣 Ingredients needed

The ingredients needed to make copycat Great Harvest cookies.

For these cookies, you will need:

  • Whole wheat flour: This recipe uses whole wheat flour just like the real deal.
  • Baking soda and baking powder
  • Salt
  • Cinnamon and nutmeg
  • Unsalted butter: You’ll want to soften your butter to room temperature.
  • Sugar and brown sugar
  • Eggs
  • Vanilla
  • Chocolate chips: You can also substitute raisins or caramel chips.
  • Old fashioned rolled oats

🍫 Variations

You can use chocolate chips or raisins in this recipe. Some locations use caramel chips in their oatmeal cookies with sea salt on top. Feel free to swap the mix-ins for whatever you like.

🔪 Equipment needed

You will need a hand or stand mixer, large mixing bowl, large cookie scoop, baking sheet, and parchment paper (not wax paper).

⏲️ Recipe instructions (step by step guide)

Preheat your oven to 350° and lining a baking sheet with parchment paper.

Cream together your softened butter, vanilla, sugar, and brown sugar (image 1).

Next, add in the remaining ingredients except for the chocolate chips (or your desired mix-in). Mix until well combined (image 2). Do not over mix.

Stir the chocolate chips in with a large spoon (image 3).

Use a large cookie scoop to form dough balls (image 4). Leave room for the cookies to spread.

Bake for 13 to 15 minutes or until the edges are golden. Let the cookies rest on your baking sheet for at least 10 minutes before transferring to a cooling rack.

  • Use parchment paper for the best results.
  • Your baking time may vary. You’ll know the cookies are ready to take out of the oven when their edges are golden brown.
  • Let the cookies rest on the baking sheet for at least 10 minutes before transferring them to a cooling rack.

🥡 How to store leftovers

Store any leftover cookies in an airtight container at room temperature. These cookies will be good for up to four days after making.

Ingredients
  

  • 1 ¾ cups whole wheat flour
  • 3 ½ cups old fashioned rolled oats
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 cup unsalted butter softened to room temperature
  • 1 ½ cups brown sugar packed
  • ¼ cup sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup chocolate chips *

Instructions
 

  • Preheat your oven to 350° and lining a baking sheet with parchment paper.
  • Cream together your softened butter, vanilla, sugar, and brown sugar.

Recipe note: I used a large cookie scoop (#20) for these. You will need to adjust the baking time if using a standard size cookie scoop or making smaller cookies.

    These cookies are so addictive, my kids who is fan of chocolate chips enjoyed it, they are not that great fans of oatmeal, still they loved and asked for more cookies.
