This recipe goes great over buttered egg noodles, mashed potatoes, or mashed cauliflower, if you’re watching your carbs. This is a wonderful recipe that’s very family friendly, my kids love it!
Ingredients needed
For this recipe, you will need:
- Chicken thighs: You can also substitute chicken breast.
- Cream of chicken soup: You’ll need one can (about 10.5 ounces). You can also use homemade if you don’t like the canned stuff.
- Sour cream: You’ll need one cup of sour cream.
- Mushrooms: You’ll need 8 ounces of fresh sliced mushrooms.
- Yellow onion: You’ll need one small yellow onion.
- Salt and pepper: I found that the cream of chicken and onion soup mix had enough salt already and didn’t add any. I recommend doing salt and pepper to taste.
- Onion soup mix: Such as Lipton’s. There is no need to prepare to the mix beforehand.
How to make
Spray your slow cooker with non-stick spray. Next, add in your sliced onion and mushrooms. Add the chicken thighs on top.
In a small bowl mix the sour cream, salt and pepper, cream of chicken and onion soup mix. Pour over the chicken.
Cook on low for 6 to 8 hours or on high for 4.
Tips
- If you’re in a hurry, you can stir everything together in the crockpot instead of the bowl. Be sure to stir in the soup mix so it cooks evenly.
- I find chicken thighs tend to retain more moisture than chicken breast in the crockpot but you can also substitute chicken breast in this recipe.
