Sourdough Graham Crackers

These Sourdough Graham Crackers are a great alternative to store bought cookies (like Teddy Grahams or Bunny Grahams) and taste so much better. You can use active starter or your sourdough discard for this recipe.

These Sourdough Graham Crackers are a lot like the graham cracker snack cookies (Teddy Grahams or Bunny Grahams) that you can buy at the store but a little softer. They are a mildly sweet cookie that go great with a cold glass of milk.

It seems like my kids always need snacks for their lunchbox or after school. Needless to say, I’m always up for trying to experiment and come up with a new sourdough recipe beyond just bread. Some of my family’s other favorites are these Sourdough Vanilla Wafers, Sourdough Cheese It Crackers, Sourdough Animal Crackers, and these Sourdough Oatmeal Cookies.

🥣 Ingredients needed

The ingredients needed to make sourdough graham crackers.

For these graham crackers, you will need:

  • All purpose flour
  • Salt
  • Baking soda
  • Cinnamon
  • Unsalted butter: Be sure to soften your butter to room temperature.
  • Brown sugar and white sugar
  • Honey
  • Vanilla extract
  • Sourdough starter: You can use sourdough discard or active starter for this recipe. I have tried it with both. If you are new to sourdough dough baking be sure to check out my guide on how to make sourdough starter with blueberries.

🔪 Equipment needed

You will need a small cookie cutter. I used a small teddy bear cookie cutter that was a little less than two inches big. You can use a small cookie cutter, just reduce the bake time by one to two minutes.

You will also need a rolling pin to roll out the dough.

⏲️ Recipe instructions (step by step guide)

Begin by preheating your oven to 350° degrees. In a large mixing bowl whisk together your dry ingredients (all purpose flour, brown sugar, white sugar, salt, cinnamon and baking soda) (image 1).

Next, beat in your butter (softened to room temperature), sourdough discard, vanilla, and honey. Mix with a hand or stand mixer until just combined (image 2). Do not over mix.

On a floured surface, roll out your dough with a rolling pin until your dough is around ⅛th of a inch thick. Use your cookie cutter to create your desired shape (image 3). I used a cookie cutter that ways a little under two inches.

Transfer to a parchment paper lined or greased baking sheet. Bake for 8 to 10 minutes or until the edges are golden brown. If using a smaller cookie cutter you may need to reduce your bake time by a minute or two.

  • If you are using a smaller cookie cutter, reduce the bake time by a minute or two. The cookies should be golden brown on the edges.
  • These are homemade graham crackers. They will be softer than store bought graham crackers.

🥡 How to store leftovers

Store any leftovers in an airtight container at room temperature. These graham crackers will be good for up to four days after making.

    Has anyone tried making these with whole wheat flour or half all purpose half whole wheat? Curious to know how they would turn out.

      I don’t usually recommend to do this because if you leave it overnight it will cause it to ferment and cinnamon inhibits the fermentation. A few hours in the fridge would be OK though. 🙂
