These Oatmeal Blondies are loaded with wholesome oats and are so buttery, gooey, and sweet. They’re quick and easy to make and are the perfect dessert for a crowd.

These Oatmeal Blondies are one of my favorite easy desserts to make. My kids love them but I’ve made these for several meal trains and they’ve gotten a ton of compliments. You can’t go wrong with wholesome oats, chocolate chips, and buttery sweetness!

🥣 Ingredients needed

For this recipe, you will need:
- Butter: With most of my recipes and especially my baking recipes, I recommend using unsalted butter. Salted butter has more water than unsalted butter and the saltiness can vary brand to brand. I recommend using unsalted butter in order to better control the amount of salt going into the recipe.
- Sugar and brown sugar
- Eggs
- Vanilla extract
- Old fashioned oats
- All purpose flour
- Baking soda and baking powder
- Salt
- Chocolate chips
- Nuts: These are totally optional but feel free to add ½ of a cup of pecans or walnuts to these.

These blondies are completely customizable. Feel free to change the mix ins up. Some ideas from me include leftover Halloween candy, white chocolate chips, mini peanut butter cups, or caramel chips.
🔪 Equipment needed
You will need a 9 x 13 inch baking dish, large mixing bowl, and a stand or hand mixer for this recipe.
⏲️ Recipe instructions (step by step guide)

Preheat your oven to 350° and spray your 9 x 13 inch baking dish with non-stick spray.
Cream together your butter (softened to room temperature), vanilla extract, brown sugar, and sugar (image 1).
Next, add in the remaining ingredients except for the chocolate chips and nuts (image 2). Mix until well combined but do not over mix.
Stir in the chocolate chips and nuts (if desired) with a large spoon (image 3).
Add the batter to your baking dish and gently pat it down (image 4). The batter may seem thin but it will rise as it bakes. Bake for 30 to 35 minutes or until a toothpick comes out clean from the middle.
Let the bars cool for 5-10 minutes before cutting and serving.

- Let these blondies cool before serving or storing.
- These are totally customizable. Feel free to change the mix-ins if you like.
🥡 How to store leftovers
Cover your baking dish with a lid (if you have one), aluminum foil, or plastic storage wrap. You can also cut and transfer the blondies to a food storage container once they are cool. Leftovers will be good for up to four days after making.
If you’d like to freeze, I recommend letting the blondies cool completely and cut them into squares. Double wrap each square in aluminum foil and transfer to your freezer. They will be good for up to three months in your freezer.
