If you’ve never made blackened fish at home, it’s actually super easy. Since I love easy family meals, I cheat and just use store bought blackening seasoning. I’ll also include instructions for a homemade mix in case you don’t have any on hand.

📋 What does “blackening” in cooking mean?
Blackening in cooking means to use blacken seasoning (a blend of spices) to coat something with (usually fish or chicken) then you cook it over high heat.
🧂 Ingredients needed
This recipe is super easy, you will need:
- Cod fillets: Cod is a somewhat firm type of fish and very good for pan frying.
- Blackened seasoning: My local grocery store carries blackened seasoning or you can also grab some from Amazon. No blackened seasoning on hand? I’ll include a homemade version below.
- Butter: To cook the fish in.
- Lemon (optional): To squeeze on before serving.
👩🏻🍳 How to make blackened seasoning
No blackened seasoning on hand? You can easily make your own by combining:
- 1 ½ teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon black pepper
- ½ teaspoon cayenne pepper
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
🥘 How to cook
Dry your fish with a paper towel. Drying is really important when pan searing your fish.
Season your cod with the blackened seasoning.
Heat the butter up in a skillet. Allow the pan to get hot and the butter to melt before adding the cod.
Cook four minutes per side over medium-high heat or until blackened. A meat thermometer should read 140 degrees.

This cod goes great with a variety of dishes like steamed vegetables, baked potatoes, quinoa, or rice.
🥡 How to store leftovers
Store this fish in a airtight container in your refrigerator. It will be good one day after cooking.

- Don’t be tempted to move the fish around your pan. This will help the fillets to stay together. If they do come apart, don’t worry they will still be just as tasty.
