This Instant Pot Italian Chicken can be ready in about 30 minutes! It is perfect for a busy weeknight dinner.

I love using my Instant Pot for chicken (like this Instant Pot Hawaiian Chicken and these Instant Pot Lemon Rosemary Chicken Thighs). Not only is it so easy and hands off, but the chicken comes out perfectly cooked each time.

This recipe uses just a few simple ingredients and best of all, if you forgot to defrost your chicken, you can cook it from frozen too.

This Instant Pot Italian Chicken is perfect for a busy weeknight. It goes great with simple side dishes like pasta too.

🍗 Ingredients needed

The Ingredients needed to make Instant Pot Italian Chicken.

This recipe is super simple, you will need just a few ingredients:

  • Chicken breast: You can use fresh or frozen. You will need about one pound of boneless chicken breast.
  • Italian seasoning, garlic powder, salt, and pepper: The seasonings for the chicken.
  • Chicken broth
  • Olive oil: Or another neutral oil.

⏲️ Recipe instructions (step by step guide)

Turn your Instant Pot to saute mode. Add the olive oil to your Instant Pot then season each side of your chicken breast. Saute each side for one minute (image 1).

Carefully, remove the chicken and add the trivet (wire rack). Add one cup of chicken broth (use two cups if you are using an 8 quart pressure cooker) and the chicken breast on the trivet (image 2).

Secure the lid to your Instant Pot. Turn the valve to sealing pressure.

Select pressure cook (or manual cook) and cook at high pressure for 8 minutes for fresh chicken. For frozen select 10 to 12 minutes (depending on how large your chicken breast are).

Once the cooking cycle is complete, carefully do a quick release.

🥗 What to serve with this recipe

I love to serve this chicken with alfredo sauce like this Copycat Maggiano’s Alfredo or Copycat Fazoli’s Alfredo! This Copycat Carrabba’s Bread and Olive Oil Dip is also a great recipe to serve with this chicken.

👩🏻‍🍳 Tips

  • Use low sodium chicken broth, if you are sodium sensitive.

🥡 How to store leftovers

Store any leftover chicken in an airtight container in your fridge. The chicken will be good for up to three days after making.

If you’d like freeze any leftovers, I recommend shredding then placing in a freezer safe plastic storage bag.

Why is my chicken breast rubbery in Instant Pot?

If your chicken breast is rubbery, it has probably been overcooked. Pay close attention to cooking times. Searing the chicken breast (on saute mode) will also help yield the best results.

Is it better to slow cook or pressure cook chicken breast?

Slow cooking chicken breast can cause the chicken to become dry. The slow cooker is better for different cuts of meat like chicken thighs. I prefer to use the pressure cooker for chicken breast.

  • Instant Pot (pressure cooker) 6 quart

Ingredients
  

  • 2 tablespoons olive oil extra virgin (or other neutral oil)
  • 1 pound boneless and skinless chicken breast fresh or frozen
  • 1 teaspoon Italian seasoning blend
  • ¾ teaspoon garlic powder
  • ¼ teaspoon salt or to taste
  • 1 pinch black pepper or to taste
  • 1 cup chicken broth

Instructions
 

  • Turn your Instant Pot to saute mode. Add the olive oil to your Instant Pot then season each side of your chicken breast. Saute each side for one minute.
    2 tablespoons olive oil, 1 pound boneless and skinless chicken breast, 1 teaspoon Italian seasoning blend, ¾ teaspoon garlic powder, ¼ teaspoon salt, 1 pinch black pepper
