My kids love the soft and springy madeleines at Starbucks. We occasionally indulge in them from time to time when I do a coffee a run but honestly, I’m all about making Copycat Recipes at home! This copycat version is buttery, sweet, springy, and soft just like the real deal. This is a must make recipe for any Starbucks fans out there.

The ingredients needed to make copycat Starbucks Madeleines.

For these madeleines, you will need:

  • Butter: You’ll want to use softened unsalted butter for this recipe.
  • Eggs
  • Vanilla extract: We are using vanilla instead of the traditional lemon or combination of lemon and vanilla in madeleines. Starbucks madeleines only have a hint of vanilla instead of lemon.
  • Salt
  • Sugar
  • All purpose flour
  • Baking powder

You will need a hand or stand mixer and a madeleine pan (12 cookie size).

⏲️ Recipe instructions (step by step guide)

A step by step guide showing how to make Copycat Starbucks Madeleines.

Preheat your oven to 375℉ (190 ℃) and grease your madeleine pan or mold very well.

With your hand or stand mixer, beat together the eggs, vanilla and salt. Begin at medium speed then quickly bring to a high speed. Beat until the mixture becomes light and slightly frothy(image 1).

Slowly add the sugar a little at a time. Mix for 3 to 5 minutes. The mixture should look frothy (image 2).

Lower the speed of your mixer and gently add in the flour, softened butter, and baking powder. Mix until everything is well combined (image 3).

Spoon the batter into your well greased madeleine pan (image 4). Bake for 14 to 17 minutes. You will know they are done when the tops spring back when you gently press on them.

👩🏻‍🍳 Tips

  • Grease your mold generously. Even mine pulled a little, these cookies can be quite delicate.
  • You must use a madeleine mold or pan for this recipe.

🥡 How to store leftovers

I believe these madeleines are best served fresh from the oven but they you can store them for 2-3 days after baking in an airtight container.

You can also double wrap them in aluminum foil to freeze them. They will be good in your freezer for up to two months.
