Rice Crispy Treats with Jumbo Marshmallows

Do you have a bunch of jumbo marshmallows leftover from camping? These rice crispy treats with jumbo marshmallows are absolutely delicious. They’re just like regular rice crispy treats but with a few different steps.

For this past Christmas, I got my husband a fire pit. It has been an awesome gift so far and we’ve roasted lots of marshmallows and hot dogs.

My kids and my husband love rice crispy treats and asked me to make some. Since we’ve been roasting lots of marshmallows on our fire pit we only had jumbo marshmallows in our pantry. If you’re wondering if you can make rice crispy treats with jumbo marshmallows you totally can.

What are jumbo marshmallows?

Marshmallows come in three different sizes: mini, regular, and jumbo. Jumbo are also sometimes referred to as roaster or extra large marshmallows. This recipe calls for jumbo marshmallows, not regular marshmallows so make sure you are using the correct kind.

Can you use jumbo marshmallows to make rice crispy treats?

Yes, you can! You need to cook them on medium low and stir frequently. They take a bit longer to melt down than the mini or large varieties.

What size pan is needed for this recipe?

You will need a 9 x 9 inch pan. Be sure to grease your pan well.

For this recipe, you will need:

  • Jumbo marshmallows: Be sure you are using jumbo marshmallows, also called roaster marshmallows. See the picture above for reference.
  • Rice cereal: Such as Rice Krispies.
  • Butter: I used unsalted butter, but you can also use salted if your prefer a little salt in your recipe.
  • Vanilla extract: If possible, use pure vanilla extract.

How to make rice crispy treats with jumbo marshmallows

Measure your rice cereal out in a large mixing bowl. Set it aside.

Spray a large cooking pot with non stick spray. Next, slice your butter and add it to the pot. Cook on low until the butter is melted.

Add your jumbo marshmallows and cook them on medium-low until they are completely dissolved in the butter. Be careful not to raise the temperature too much. Cook them low and slow while frequently stirring.

Once the marshmallows are completely melted add the vanilla extract and stir well.

Pour over the rice cereal. Using a spatula mix it well and then transfer it to a greased 9 inch pan.

Tips for this recipe

  • Cook on medium low and stir, stir, stir! Since the marshmallows are quite large they take a little longer to melt down.
  • Use fresh ingredients. Both rice cereal and marshmallows can go stale easily. Old marshmallows can make the treats come out too hard.
  • Do not press the rice cereal down with your hands, it makes the treats hard.
  • Do not refrigerate these treats or they will harden.
  • If needed, you can double this recipe.

  • 6 tablespoons unsalted butter salted butter works fine if you prefer a little salt in your treats
  • 15 jumbo marshmallows This recipe is for jumbo (also sometimes called roaster) marshmallows. Refer to the photo in the post if you are unsure if your marshmallows are jumbo.
  • 1 teaspoon pure vanilla extract
  • 5 ½ cups rice cereal

    How long can you keep them?

      Hi Layla, they’ll be good for about three days after making. After that they start to get a little stale. I recommend keeping them in an airtight container at room temperature.

    I added a half cup of peanut butter to the melted marshmallows and topped it off with melted chocolate chips. I added a tblsp coconut oil to the chips. Yummm!

    Added 3/4 c salted peanuts.
    Excellent, easy recipe. Cut jumbo marshmallows in half as they melted. Used my metal stirring spoon. Melted faster..addeded 1/2 cup sea salt. These are delicious and easy. THANK YOU for sharing.
