These Christmas cowboy cookies are sure to be your new favorite Christmas treat. They’re the perfect cookie to bring to holiday parties or gift to neighbors and friends.
Don’t get me wrong, I love sugar cookies (like these copycat Great American sugar cookies) but cowboy cookies are up there on my favorites list. I think these are such a fun treat for holiday cookie trays. These are a fun cookie to leave out for Santa too!
These cowboy Christmas cookies are super easy to make. There is no need to chill the dough which makes them a quick cookie to make too!

Ingredients needed
For these cookies, you will need:
- Butter: I always recommend using unsalted butter in baking. Salted butter contains more water and the salt content varies brand to brand.
- Sugar and brown sugar: To sweeten the cookies.
- Baking powder and baking soda: To help the cookies rise.
- Egg: You will need one large egg for this recipe.
- Vanilla extract: If you can, use pure vanilla extract.
- All purpose flour: The base of the cookie dough.
- Salt: You’ll need just ¼ teaspoon of salt.
- Quick oats: You can also substitute old fashioned.
- Coconut flakes, M&Ms, and chocolate chips: The add ins for this recipe.
Equipment needed
You will need a large mixing bowl, stand or hand mixer, and a baking sheet. I used parchment paper (not wax paper) but you can grease your baking sheet if you don’t want to use parchment paper.
How to make
Preheat your oven to 375 degrees.
In a large mixing bowl combine the butter (softened to room temperature), brown sugar, sugar, and vanilla. Mix with a hand or stand mixer until well combined.
Next, add in the baking soda, baking powder, and all purpose flour. Mix with a hand or stand mixer until well combined.
Add in the oats, coconut flakes, M&Ms, and chocolate chips. Stir in using a large spoon until well combined.
Form large dough balls using about three tablespoons of dough. Place on a parchment paper lined (not wax paper) or well greased baking sheet. I did six per sheet. Leave room for the cookies to spread.
Bake at 375 degrees for 8 to 10 minutes. Let the cookies rest for 10 minutes before moving. This will help them finish baking.
Variations
- You can add walnuts or pecans to these cookies, if desired.
- You can do all M&Ms if you prefer M&Ms.
Tips
- Be sure to bake these cookies at 375 degrees and not the typical 350. The higher temperature keeps them from spreading as much.
- Make sure to measure your flour correctly or your dough will be too crumbly.
How to store leftovers
Store any leftovers in an airtight container at room temperature. Cookies will be good for up to four days after making.

I am going to try this recipe minus the coconut but with the addition of walnuts. I love the idea of the oatmeal and chocolate since I do not care for raisins in oatmeal cookies.
